Gardening 101 – Kale salad

Just harvested some kale, bok choy, and blueberries from the garden at Edgewater Farm and thought I’d share a simple salad that is probably the best thing you can do for your body. Kale, known as the “queen of greens,” is one of the healthiest vegetables on the planet. It’s packed with antioxidant vitamins A, C, and K–associated with many anti-cancer and anti-aging health benefits. I’m getting younger just smelling it!
Kale Salad 101: wash and chop the kale, toss with blueberries (the highest anti-oxidant value fruit long attributed to the longevity and wellness of Arctic indigenous natives!) Then, dress with a mixture of balsamic vinegar and olive oil, and you’ve got a WOW for both your tastebuds and your cells.
Now, that’s a salad that will do a body good!
