Holidays – Columbus Day

He doesn't look very happy for someone who discovered America.

Today is Columbus Day, which commemorates the day Christopher Columbus discovered the New World in 1492 (the same year he sailed the ocean blue.) Here’s some of the history nerd in me: Columbus was Italian, but his voyage was backed by Ferdinand and Isabella, the infamous Spanish monarchs. He also intended to find a new route to China, but his ship got turned around and he ended up in the Bahamas. How I love the History Channel. The day is also about celebrating Italian-American heritage, so you’re obviously going to need to whip up some fettucini alfredo for dinner. Try this low-cal version from Cooking Light.
